100-200g cooked spanner crab
1 punnet cherry tomatoes
4-5 garlic cloves (skin on)
Lemon zest
Olive oil
Salt and pepper
Linguine (or spaghetti)
Pop cherry tomatoes, whole into a baking dish with the garlic cloves. Season generously with olive oil, salt and pepper. Pop into a low oven and bake for approx. 30-40 mins (until caramelised and darkened).
Bring a pot of water to boil for your pasta, and salt, add linguine (do this just before the tomatoes are ready).
Remove tomatoes from the oven, add the crab to the baking dish with the tomatoes and mix through (to warm it), then add zest of lemon (the lemon elevates all the flavours - so add to taste).
Drain pasta and combine altogether in a serving bowl (you might to add a spoonful of pasta water here or more olive oil). Serve and enjoy!
