The blue mussel – a bivalve mollusc – is an underrated treasure. They are cheap, live, farmed sustainably, readily available year-round, full of nutrients and easy to prepare. Mussels are moist with a distinct, oceanic flavour and a just-firm texture when prepared correctly. Cook them in the shell by steaming or poaching in a pot, barbecue, smoke or pickled them. Mussels pair beautifully with pasta or good bread white wine, tomato, saffron and fresh herbs.
