Fresh water rainbow trout from the Goulbourn Valley. Sustainably farmed and available year round. Fill with slices of lemon, cultured butter, a good handful of fresh herbs and bake in a moderate oven for around 20mins.

Gutted and Scaled. Fresh fish from Australia. Approx. 450gm per fish. Keep refrigerated and consume within 2-3 days.
