Barbecued Calamari with Lemon & Olive Oil Dressing

There is nothing quite like calamari straight off the barbecue – slightly charred, tender, dressed with olive oil and lemon. It's one of the great simple pleasures of seafood cooking. The key is high heat and speed – calamari goes from perfect to rubbery in moments, so you need to be ready to move quickly and serve immediately. This is the dish we make every summer without fail. It disappears faster than anything else on the table. Barbecued Calamari Serves 4 as a starter You'll need 600 g calamari tubes and tentacles, cleaned 3 tablespoons extra-virgin olive oil, plus extra to serve 2 garlic cloves, crushed juice of 1 lemon, plus wedges to serve 1 teaspoon dried oregano salt flakes...

Crispy Flathead Tacos with Smoky Chilli Slaw

Flathead is one of the great Australian fish – sweet, delicate and perfect for frying. Tucked into a warm corn tortilla with a smoky, crunchy slaw and a squeeze of lime, it becomes a fish taco that can stand up to any version you'd find anywhere in the world. This has become a regular weeknight dinner in our house, and the kids love it. The smoky chilli slaw can be made ahead and keeps well in the fridge, which makes this dinner come together very quickly on the night. Crispy Flathead Tacos with Smoky Chilli Slaw Serves 4 You'll need 600 g flathead fillets, pin-boned, cut into strips plain flour, for dusting 2 eggs, lightly beaten 1 cup panko breadcrumbs...

Tuna Tartare Guacamole

This is one of those combinations that sounds unexpected but makes complete sense once you taste it. The richness and butteriness of ripe avocado is a perfect foil for fresh, clean tuna tartare – they work together in the same way tuna and avocado do in a sushi roll. We love serving this as a starter or as part of a bigger spread, piled high on a crispy corn chip or with crackers. As with all raw fish preparations, the quality of the tuna is everything. Use the freshest sashimi-grade tuna you can find, and this dish will sing. Tuna Tartare Guacamole Serves 4–6 as a starter You'll need 300 g sashimi-grade tuna, finely diced 1 tablespoon soy sauce 1...

Kingfish Carpaccio

Carpaccio is an Italian classic – thinly sliced raw protein dressed beautifully and simply. At The Fishmonger's Son, kingfish is one of our favourite fish to eat raw because it has this incredible richness and silkiness that lends itself perfectly to being dressed with nothing more than good olive oil, lemon, and a scattering of something a little salty and sharp. It's a dish that speaks for itself. The key here is sourcing the freshest, sashimi-grade kingfish you can find – come and see us in store and we'll sort you out. The thinner you can slice it, the more elegant the result. Kingfish Carpaccio Serves 4 as a starter You'll need 400 g sashimi-grade kingfish fillet, skin off 3...

Prawn & Cray Roll

This is the roll that started it all, really. When we opened The Fishmonger's Son in 2018, we wanted to offer something that captured the joy of eating fresh, beautiful seafood in a casual, no-fuss way. A prawn and cray roll does exactly that. Sweet cooked prawns and crayfish, tossed in a light mayo dressing and piled into a soft roll – it's simple, generous and the kind of thing you want to eat standing up in the sun. We serve these in store, and they are always one of the most popular items on our menu. This is the version you can make at home – honestly, it's even better when you're surrounded by your own family. Prawn &...
